Anderson Mendoza joined Lila Portals in 2017 as Sous Chef before taking over from our long-time Chef, Jens Bräuning, at the end of 2019. After training in his home country of Colombia where he first started his journey into fine dining, Anderson continued his career on the Spanish mainland, working at various restaurants, including head chef position at the famous VinoTinto restaurant in Valencia, before moving to Mallorca where he has worked for a selection of restaurants, including Koa restaurant.
