Owner and manager

Stefan Zaelke

After studying at the Ecole hôtelière de Lausanne in Switzerland, German-born Stefan Zaelke, gained over 11 years of experience in the international luxury hotel industry. Most recently as Director of Food & Beverage in the 5-star hotels Hyatt Regency La Manga, Castillo Hotel Son Vida and the Gran Hotel Son Net on Mallorca.

Chef

William Huertas 

William Huertas (43) has been part of the Lila Portals team since 2017. He started as sous chef together with our long-standing head chef Anderson Mendoza. At the beginning of 2025, William then took over the lead of the kitchen team.
After training at the SENA Atlantico cookery school in his home country Colombia, William began his career at the Club Campestre restaurant in Bogota before moving to Spain in 2008. Here he has worked at restaurants including Sagardi in Valencia, Ramses in Madrid and the Palladium Palace Hotel in Ibiza.
